450g dried cannellini beans, soaked overnight

750ml chicken stock

100g Parmesan rind

3 bay leaves

2 garlic cloves, peeled

1 rosemary sprig

2 tablespoons olive oil, plus extra for drizzling

sea salt and freshly ground black pepper

Preheat oven to 160°C/325°F/Gas 3. Drain the beans and combine with the other ingredients in a 23 x 33 x 6.5cm baking tin. Cover with foil and bake for about 1 hour 30 minutes until beans are tender and liquid has thickened. Remove Parmesan rind and serve, drizzled with a little extra olive oil.
